How to Store Kilishi So the Last Pack Tastes Like the First

One question comes up more than almost any other: if I buy a few packs at once, will the last one still be good? The short answer is yes, as long as you treat it right. Kilishi is a dried, spiced meat, which is exactly why it travels and keeps so well. But a few small habits make the difference between a last pack that tastes as good as the first and one that has gone a bit tired.

Keep it sealed until you need it

Every MOBKILISHI pack is sealed for a reason. Air and moisture are what dull the spice and soften the texture, so leave unopened packs closed until you are ready to eat them. If you have a few packs at home, open one at a time rather than several at once.

Cool, dry and out of the sun

A kitchen cupboard, a drawer or a shelf away from the cooker is perfect. Avoid leaving packs in a hot car, on a sunny windowsill or next to anything that gives off steam. Heat and humidity are the two things that shorten the life of any dried snack.

Once it is open, close it properly

If you do not finish a pack in one sitting (it happens, rarely), press the air out and seal it tightly, or move what is left into a clean airtight container. Then aim to finish it within the next few days, while the crunch and the pepper are at their best.

Use clean, dry hands

It sounds small, but reaching into a pack with wet or oily fingers brings moisture in with you. Dry hands keep the rest of the pack in good shape.

• Crumbled over rice or yam. Break a few pieces over jollof, fried rice or boiled yam for a smoky, peppery lift.
• On a small chops tray. Put it out when guests come round and watch it go first.
